Heidi’s Merlot Poached Pears


  • 6 Bosc pears
  • 1 bottle Merlot wine (750 ml)
  • 1 cup honey
  • 1 fresh vanilla bean
  • 1 star anise pod
  • 1 cup water
  • 2 tablespoons lemon juice
  • 8 ounces Mascarpone cheese
  • Pinch of salt


Combine all ingredients in a saucepan, reserving pears off to the side.  Bring the ingredients to a boil.  Add the pears and reduce heat to a simmer.  Allow pears to bathe in Merlot sauce 35 minutes or until pears are well stained.  Remove pears and continue to reduce Merlot sauce on medium high heat, stirring often.  Plate warm pears stem point up, add a small scoop of Mascarpone, and drizzle with Merlot reduction.
